Recipe for Fried Mullet, As Cooked by My Father



Put your large black iron frying pan on the stove.
While it heats take your fresh, I mean fresh
As in caught today
Mullet fillets and cover them in flour.
Put some vegetable oil (not too much) in the pan
Let it heat up.
Carefully (don’t splash the oil)
Put the fish in the pan, skin side up
Throw on some salt and pepper.
Cook them pretty fast till they look good and brown on the bottom
When you peek.
Use a fork and knife to turn over each piece
Cook them a while on the skin side.
Turn them back and forth if necessary to get the color
Just right.
Take the fish out and put them on a plate covered in paper towels
To soak up the extra oil.
Let them sit just long enough to cool down
So they don’t burn your mouth.
Dig in.
